cochinta pibil

Here's a great dish called cochinta pibil I had at a local restaurant. You have to use Achiote Paste in it or it won't taste right. The pork itself isn't spicy and, to be honest, it's addicting, so watch how much you eat of it. Some ways to cut calories for it is to add a side of black beans and rice and to hit it with some hot sauce.
